This research work was carried out with the objective of extracting natural pigments from Opuntia ficus-indica, so that a visual analysis of the fruit was carried out, then the drying process is carried out in the lyophilization equipment at different temperatures (50, 60 and 70º C) until reaching a humidity of 19.33%, of the tests carried out the most appropriate was the temperature of 60º C in a time of 12 hours, the solid obtained was taken to an extraction stage using 96% ethyl alcohol as a solvent, the solvent was then separated in the broken steam to obtain 51.21% of the dye, which was then tested according to regulation (EU) No. 231/2012, determining that the parameters analyzed comply with it, in addition the analysis was performed on the visible UV spectrophotometer at a wavelength of 482 nm identifying that the dye is composed of betaxanthines.
