Obtaining natural colorants tuna (Opuntia ficus-indica)

This research work was carried out with the objective of extracting natural pigments from Opuntia ficus-indica, so that a visual analysis of the fruit was carried out, then the drying process is carried out in the lyophilization equipment at different temperatures (50, 60 and 70º C)
